Homemade Almond Milk

So yesterday I attempted to make almond milk. It probably should have been a lot easier but my blender decided to stop working, I tried to use my food processor with too much water & it overflowed into the oven…you get the idea
But I’m pretty sure if those things DIDN’T happen, it would have been super easy…& it turned out super delicious without all that added sugar, salt, preservatives, blah, blah, blah…
Just make it
First, you have to soak the almonds (raw, not roasted or salted.) We got a big bag from Costco.
We let them soak for about 8 hours. I don’t know if you can tell, but they are probably twice the size of the non-soaked almonds.
I drained the almonds & got the other ingredients together.
Cinnamon, dates & vanilla extract.
I added the almonds to the blender along with the cinnamon, dates & vanilla extract.
This got moved to the food processor shortly…of course after I added the water, I discovered the blender decided to die on me.
So after the whole debacle everything was processed in the food processor…
We got almond mash! At this point, I poured the mash into a nut milk bag to strain into a bowl.
I got my nut milk bag at a kitchen store in Brooklyn but you could use a cheese cloth or even a fine strainer (just may have to strain it a couple times).
BLC twisted & strained every little bit out of the nut milk bag (I saved the pulp to dry & use as almond meal! No waste here!!)
The milk was creamy & super tasty.
A must try! & kinda fun to make (as long as your blender works…)!
Homemade Almond Milk
2 cups almonds, soaked for 8 hours or more
4 dates
1 tsp vanilla extract
1 tsp cinnamon
4 cups water (more or less depending on your desired thickness)
- Add almonds, dates, vanilla, cinnamon & water to blender (if using food processor, do in two smaller batches).
- Blend until thoroughly processed.
- Strain through nut milk bag/cheese cloth into large bowl.
- Pour into glasses or pitcher.
- Refrigerate or drink immediately (if saving, make sure to stir before drinking).
- Enjoy!!
